New snack ideas

This new way of eating has me getting creative with snacks. Before I never would have thought about eating a serving of vegetables as a snack, but since today is Sunday and I’m home, I thought I’d try an old favorite: mashed sweet potatoes.

I don’t do these at home very often because the rest of my family doesn’t like them very much. However, since I’m pretty much eating alone these days, I figured why not. Plus, the leftovers will make for a delicious side item to a main dish.

So here we go:

I don’t like the skins, so I just peel them off. Then poke lots of holes in it, all over.

Next I wrap it in a wet paper towel and put it in/on a microwave-safe plate (or bowl).


Pop it in the microwave for 3 minutes. Carefully remove it from the microwave using pot holders if needed. Flip your sweet potato over (be careful – it will be hot!) and microwave again for another 3 minutes. Depending on how big your potato is, it may need to be flipped on its side and microwaved more. This big sucker required 8 minutes total. Just be sure to check it every few minutes. When it’s done, remove it from the microwave with pot holders and remove the paper towel. When you remove the paper towel the steam can burn you if you’re not careful. I just used my fork to remove the towel so I didn’t get hurt. You can tell it’s done when it mashes easily with a fork. At this point you’ll need to put the potato in a bowl if you haven’t already, or put it in the food processor. I cooked it in the bowl so that I didn’t have to dirty extra dishes. Then I used my Pampered Chef meat chopper to make sure the potato was mashed up really well.

Once it’s mashed up really good you can add your seasonings. It’s best with butter! I like my sweet potatoes made sweet so I added a little bit of cinnamon and sugar, but you could add savory seasonings if you wanted. A little bit of almond milk helps make it creamy too.


Once you’ve decided and added your seasonings, make sure you mix and mash it up together really well. I like to use a whisk to blend it up.

Then you’re ready to eat! Depending on how big your potato is, I recommend portioning it into more reasonable sizes for enjoying later. You could eat it all in one sitting, but I don’t recommend it because your belly would hurt! Enjoy!
